Chicken Tikka Masala Lettuce Cups
Ingredients:

2 cups Sous Chef Chicken Tikka Masala

1 cup Sous Chef long-grain seasoned rice

3 leaves of Boston bibb lettuce

1 cup canned chickpeas (drained)

1/2 cup plain yogurt

3 tbsp chopped cilantro

1/3 cup diced cucumber

4 tbsp minced red onion

1 lime

Cilantro garnish

1 tbsp curry spice mix

Instructions:
  1. Heat oven to 400°F. Line a baking sheet with parchment paper.
  2. Strain chickpeas and place them onto a baking sheet. Drizzle some oil and season with curry spice mix.
  3. Bake for 5 minutes. Pull baking sheet out and add the Sous Chef Chicken Tikka Masala, baking for an additional 3 minutes.
  4. Remove rice from the pouch into a microwave safe bowl. Microwave for 2 minutes, stir and then microwave again for 1 minute.
  5. In a separate bowl mix yogurt, cucumber, red onion and the juice of one lime. Mix and set aside.
  6. Begin assembling with Boston bibb lettuce, layer on some warm rice, then chicken and chickpea mix, finally yogurt-based riata and garnish with some cilantro. Enjoy!
